Sweet Potato Pie Oh My!

I was inspired by my friend Mrs. V over at For the Love of Mary and her adoration of this recipe for sweet potato pie that I just had to try it. And it was totally worth every calorie, let me tell you. Normally, I’m a bit of a classicist around the holidays, but I do like to spice it up with unexpected twists (maybe a new ingredient or a different take on a traditional element). This pie ticks the box on an elevated Thanksgiving dessert. Personally, I subbed in this pre-made frozen gluten free pie crust from Trader Joe’s. But if you’re gifted enough to bake your own crust that does in fact turn out edible, by all means, do try! I will applaud you while sulking in the corner, jealous at your baking skills.
